A Daily Expression of Southern Ingredients

At J.C. Holdway, we cook with intention. Our menus begin with what is fresh, in season, and close to home, sourced from local farms, foraged from the hills of East Tennessee, or harvested from Chef Joseph Lenn’s garden.

Because our menus evolve with the seasons and are printed daily, we share sample menus online rather than nightly updates. These examples reflect the style of our cooking and the ingredients we celebrate, though specific dishes may change from day to day based on availability.

Rooted in Southern tradition and guided by refined technique, our cooking reflects a deep respect for seasonality, craft, and place.

Guests may experience our cooking in several ways:

  • À La Carte Dining – Seasonal dishes prepared over live fire.

  • Chef’s Classics – A five-course signature dinner highlighting many of the dishes that define J.C. Holdway.

  • Center of the Table Experience – Shared seasonal courses for groups of seven to twenty guests.

  • Chef’s Tasting Experience – A private chef’s counter buyout prepared personally by Chef Joseph Lenn.
