At J. C. Holdway, our cooking begins with the people who grow, mill, raise, and craft the ingredients we rely on. East Tennessee’s farms and artisans define the foodways of our region, and our relationships with them guide our menu from season to season. Many of the flavors on our table come from producers we have known for years, whose work reflects the land, weather, and traditions of Appalachia. We are grateful for their skill and partnership, and proud to share their ingredients with our guests.

Because our menu changes daily, not all partners are represented on every menu. These growers and makers help us cook in a way that honors the rhythm of the seasons and the work of our region.
